The Farm

Sol do Brasil is sourced from Mió, a family-run farm with a deep commitment to sustainability and transparency. Located in the heart of the Minas Gerais coffee-growing region, the farm is named after the year the Mogiana Rail Station was established, marking an important milestone in Brazil’s coffee production history.

Mió takes pride in its meticulous approach, tracking every detail of the growing and processing journey, from the names of farmers involved to satellite monitoring for efficiency. Their dedication to preserving the natural ecosystem is evident in their sustainable practices, including water conservation efforts and maintaining a significant portion of their land as a native forest reserve.

The Process

This coffee undergoes a natural processing method, where the beans are dried with a portion of the sweet mucilage intact. This enhances the coffee’s inherent sweetness and body, resulting in the rich and syrupy profile that makes Sol do Brasil so special. The beans are then carefully rested in silos for 30 to 60 days, ensuring optimal flavour development before roasting.
